Classic Gerbeaud Cake to Impress Your Guests

Ingredients


1,5 dl
Mizo milk

For the filling:

25 dkg
ground walnuts
20 dkg
powdered sugar
2 dkg
vanilla sugar
75 dkg
apricot jam

For the glaze:

15 dkg
sugar
10 dkg
dark chocolate
1
egg white

When thinking about well-loved Christmas cookies, Gerbeaud cake definitely makes the list. This festive dessert is a staple on many family tables year after year, and when made right, it’s absolutely delicious. Show off your baking skills by making this classic for the holidays.

Mix warm milk with 1 teaspoon of sugar, then crumble in the yeast and let it proof. Rub the cold butter into the flour, then add salt, the yeast mixture, sugar, and egg yolks. Work it all together to form a dough. Divide the dough into three equal parts, wrap each in plastic wrap, and let them rise in the fridge for about 1 hour.

For the filling, mix the ground walnuts, powdered sugar, and vanilla sugar. If needed, smooth out the jam.

Roll out each dough piece on a floured surface into 30x40 cm rectangles. Spread jam on one, walnut filling on another, then stack them. Bake at 170°C for 40-45 minutes. Let it cool after baking.

For the chocolate glaze, cook sugar and 1 dl hot water to a thick syrup. Remove from heat, then stir in chopped dark chocolate. Once it cools but is still runny, add half a teaspoon of water and the whipped egg white. Spread the glaze over the cake and allow it to set. Slice and serve on your favorite festive plate—guaranteed success!
