Lactose-Free Wildly Aromatic Lemon-Curd Cake with Cottage Cheese

Instructions:
Lemon and cottage cheese are a match made in heaven. Plus, on a lazy afternoon, you can make this cake in no time, and all you have to do is sit out on the terrace with a slice and some lemonade. Cream the soft butter with the powdered sugar, flavor it with vanilla, and then gradually mix in the eggs. Then, just stir in the zest and juice of the lemons along with the remaining ingredients. The aroma will be intoxicating even at this stage. Spoon the batter into a silicone or buttered and floured metal bundt cake pan. Bake at 180°C (350°F) for about 50 minutes until golden brown. Once baked, turn the cake out of the form and dust it with powdered sugar before serving.
