Linzer Cookies for Lactose-Free and Sugar-Free Dessert Lovers

Ingredients


20 dkg
Mizo lactose-free butter (cold)
20 dkg
whole wheat flour
10 dkg
spelt flour
5 dkg
fourfold sweetener
1 pinch
vanilla
7,5 dkg
Mizo lactose-free sour cream

For the filling:

20 dkg
sugar-free plum jam

If you’re someone who eats mindfully, but still loves to enjoy a classic cookie, this linzer won’t disappoint.

Using your fingertips or a food processor, combine the flour and cold, cubed butter. Then add the rest of the ingredients. Wrap the dough in plastic and refrigerate for 1-2 hours to firm up, making it easier to roll.

On a floured surface, roll the dough out thinly, cut out shapes, and place them on a parchment-lined baking sheet. Consider cutting little circles out of every second cookie. Bake at 180°C for 8-10 minutes.

Let the cookies cool on the sheet for a few minutes, then pair them up and fill with jam using a spreader. Store the finished linzers in an airtight container. For extra flavor, you can add a little cinnamon or cloves to the dough.
