Instructions:
Waldorf salad may be considered retro, but it's full of healthy, vitamin-rich ingredients, making it well worth preparing. It's an excellent choice for Easter, catering to those who prefer lighter meals or vegetarians. And for a special touch, serve it with tiny quail eggs – not only are they decorative, but they’re also healthy!
Boil the eggs for 8-10 minutes, transfer them to cold water, then peel them. Meanwhile, chop the lettuce, apples, and celery into bite-sized pieces. Toast the walnuts in a dry pan and coarsely chop them.
For the dressing, mix the yogurt, honey, mayonnaise, lemon juice, and a pinch of salt. Toss with the salad ingredients, then serve beautifully arranged with halved quail eggs on top.
