Lactose-free Rákóczi cottage cheese cupcake
Ingredients

Mizo lactose-free cottage cheese
2 tablespoons
Mizo lactose free sour cream
1 dl
lactose-free whipped cream
3 dkg
powdered sugar
1 package
vanilla sugar (10 g)

10 dkg
lactose-free, gluten-free butter biscuits (Gullon)
to taste
apricot jam

egg white

powdered sugar
Instructions:
For the meringues, beat the egg whites into a hard foam with the powdered sugar and press small piles of it out of a foam bag into a baking tray lined with parchment paper. Bake for approx. 15 minutes at 150 degrees C.
Beat the cream. Mix the cottage cheese, sour cream, powdered sugar, vanilla sugar, lemon zest and egg yolk, whisk in the whipped cream. Grind the biscuits, layer it with cream and jam in glasses. Decorate their tops with the meringues.
