Instructions:
Peel and wash the potatoes, grate them on a coarse grater. Mix with 1 teaspoon of salt, the egg and enough flour to make a thick noodle dough. Cut pieces of the dough with a teaspoon or noodle cutter into the very hot, boiling water and boil - it is the potato starch that makes the cooking juice thick, that is why the dumplings need to be cooked in very hot water. When drained, rinse thoroughly in warm water and allow to drain.
Boil the butter with the sour cream and a little salt, then roll in the noodles. Finely dice and fry the bacon. Mix the two types of cottage cheese and sprinkle over the noodles together with bacon crumbs. You may also serve the sour cream separately.
