Stuffed zucchini
Ingredients
For 4 persons
1 larger
zucchini
1 glass
Mizo natural yogurt (150 g)
10 dkg
Grated Mizo Trappist cheese (matured for 6 weeks) or Mizo lactose-free cheese
10 dkg
dried tomatoes
to taste
olive oil
to taste
(homemade) smoked ham
1 pinch
ground pepper
1
eggs (optional)
Instructions:
Cut the zucchini in half, remove its inside, then season with a little pepper or any spices you like. (Homemade ham is salty enough, so it is not necessary to salt it separately.) Put layers of tomatoes, ham, cheese in the zucchini and pour over the yogurt. Shape a zucchini size „boat„ from aluminum foil, sprinkle with olive oil and place the zucchini in it. Bake it until golden brown in a preheated 200 degree C oven in approx. 20 minutes. A few minutes before the dish is baked ready in the oven, you may grate a little more cheese on top, or even brake an egg on it and bake it ready with the egg on top.
