Flaky “pogácsa” with greaves

Ingredients


1/2 teaspoon
sugar
1/2 dl lukewarm
Mizo milk (2.8%)
3,5 dkg
fresh yeast
60 dkg + a little for the stretching
flour
2 dl
Mizo sour cream (20%)
2 teaspoons of
salt
3-4 tablespoons of
white wine
12 dkg soft
Mizo butter
1 db
egg
40 dkg
pork greaves

salt

freshly ground black pepper

on the top:

1 db
egg

Instructions:

 

Dissolve the yeast in sugary milk. Sift the flour into a bowl and start to mix the dough with the yeast, sour cream, salt and wine. Continue kneading by adding the butter, and when it is evenly dissolved, knead it on a floured surface with the egg until it becomes a nice and smooth mixture. Cover and leave to rise in a warm place for 30 minutes.

Stretch it thinly on a floured board, spread half of the batter on top. Season with salt and pepper, fold and leave to rest for another 30 minutes. Stretch it out, brush the top with the remaining greaves, season with salt and pepper, fold it and bake again for 30 minutes.

Stretch it to a finger’s thickness and cut out pieces with a cake cutter. Arrange them all on a baking sheet lined with parchment paper, brush the tops with the lightly beaten egg. Bake in a preheated oven at 180 degrees for about 15 minutes.
