“Betyár” soup

a peanut size of
Mizo butter

smoked bacon
1 db
onion
ízlés szerint
salt
ízlés szerint
freshly ground black pepper
25 dkg
pork leg
1 db
pepper
1 kisebb
tomato
1 tablespoon
ground red pepper

carrots

turnips
10 dkg
mushroom

parsley
1 dl
Mizo sour cream (20%)
1 tablespoon of
flour
ízlés szerint
chopped dill

for the “csipetke” (small dumplings):

1 db
egg
10 dkg
flour

salt

Instructions:

 

Fry the finely diced bacon in the butter, toss in the peeled and chopped onion, then add salt and pepper. Add the finely diced meat and fry until white. Add the chopped pepper and tomato and cook until they start releasing their juice. Remove from the heat, sprinkle with red pepper and add 1-2 dl water. Put back to boil, add the cleaned and diced carrots and turnips, the sliced mushrooms and the chopped parsley. Add water and cook until the vegetables are tender. If necessary, add some seasoning. For the “csipetke” dumplings knead the egg with the flour and salt, then pinch the knead into the soup in the size of a pea. Cook until the dumplings come to the surface of the soup.

Mix the flour in the sour cream until lump-free, gradually add some soup while stirring to balance the heat of the ingredients, then add the whole mixture to the soup. Sprinkle with dill, boil for a few minutes and serve.
