apple peel (from peeled apple peel)

Instructions:

 

Peel an apple, remove its core and cut it into equal pieces. Sprinkle with lemon juice to prevent browning. (Remove the skin of a half lemon without the white part of the peel and add it to the reduction.) Pour the sour cherry compote juice and water into a big size cooking pan, then add the apple pieces and bring it to a boil.
In the meantime prepare the reduction. Put the ingredients in a small pan and bring it to boil. Keep boiling until it reduces to half.
Once the apples are half softened, add the chopped peaches and cherries. Pour the reduction to the fruit soup through a strainer to filter out the spices.
To prepare the roux, mix milk and flour until you have a smooth mixture then add it to the boiling soup, using the heat equalization method. Boil it for 2-3 minutes. Sweeten it with sugar to your taste.
Tip: if you need to serve it as soon as possible, run cold water into the sink and put the cooking pan into cold water to cool the soup. Change the water several times until the soup is ready to be consumed.
