Whole wheat quesadillas (Mexican pizza)

Ingredients for 8 portions

50 dkg
wholemeal flour + little to knead
2 teaspoons
baking powder
1 teaspoon tapped
salt
1/2 dl
coconut oil or oil
3 dl
water

for the filling:

15 dkg
ham
10 dkg
pepperoni
1 glass
Mizo sour cream (20%, 330 g)
2 tablespoons
crumbled corn
to taste
salt
to taste
freshly ground black pepper

Mizo Trappist cheese (sliced ??or grated)

Instructions:

 

Mix the flour, baking powder, salt, coconut oil and half the water, then add as much of the remaining water as the dough requires. Knead on a floured board for approx. 10 minutes – until you have a smooth, elastic dough. Divide it into 8 equal parts and shape a small disc from each of them. Let them rest for 30 minutes, then roll them out to a thickness of 2-3 mm with a rolling pin. Fry both sides in a dry pan for 1-2 minutes each.
For the filling, chop the ham and pepper, mix them thoroughly with sour cream, corn and season it with salt and pepper.
Put 1 tortilla plate in a pan, toss 1/4 of the filling and cheese on it and cover it with another tortilla. Fry both sides for 1-1 minutes to melt the cheese inside. Serve and consume warm.

Tip: You can put some cheese underneath the sour cream base to make it even tastier.
